Erika Jo’s Mediterranean Inspired Hot Mess
Consumed after run, last meal of the day, 5th meal. Took 5 minutes to prep and 5 minutes to cook. My picture isn’t that great because I was hungry and took it quickly!
24.5 g of Protein
28.5 g of Fat (half of it coming from olive oil so you can use less or a substitute)
13.8 g Carb
5 Sticks of Asparagus
3/4 Cup of Spinach
1 3/4 Chili Lime Chicken from Trader Joe’s (Cut in pieces)
1 Tablespoon Olive Oil
1/2 Kumato Brown Tomato (diced)
1 oz Greek Sheep Goat Feta
2/3 oz of Sun Dried Tomatoes
1 Teaspoon Chopped Garlic
Heat pan with olive oil. Add asparagus and garlic and put cover on pan. Heat for 2 minutes. Add chicken, spinach, and Kumato heat for 2-3 minutes until chicken is warm. Serve on plate then crumble feta cheese and sun dried tomatoes on top. Squeeze lemon to taste.
